Let’s start the new year with an energizing food!

EGGPLANTS appetizer

Total time: 30 minutes
Ingredients: 2 medium eggplants – 2 tbsp EVOO – Italian Parsley – Half lemon (juice only) – Hummus (organic preferably) 1 cup – Salt & Pepper

Preheat oven at 450F
Place the whole eggplant on a baking sheet and poke it in several spots with a fork. Let it bake for 25 minutes (it should be tender).
Peel the skin (careful to handle it while it’s hot) and put the internal eggplant in a bowl. Make it mashed with a fork and spoon until pretty smooth.
Stir in lemon, parsley, salt, pepper and hummus.
Et voila’!
You can serve it with millet crackers, or pita chips. Always remember to choose them whole grain, all natural.
